Whenever I go to grocery store feel like buying Asparagus but unfortunately worried that my kid won't eat as side dish. But keeping the benefits in mind always tried to use this vegetable in different ways. Yesterday decided to cook in indian style with spices. As expected it came out good and my kid loved it.
Here is the recipe for the same
Ingredients:
1 lb Asparagus wash and chop.
1 medium size onion finely chopped
4 green chilies split length wise(adjust as per spice level)
Sauce Ingredients:
1tbsp peanuts
1tbsp almonds
1tbsp cashews
1tbsp sesame seeds
2 red chilies
1/2 tsp coriander seeds
1/2tsp cumin seeds
4 cloves
1/4inch cinnamon stick
Salt as per taste
1tbsp oil
tempering:
1tsp mustard seeds
1/2tsp cumin seeds
curry leaves
Procedure:
Dry roast all the sauce ingredients and make a paste.
Cook Asparagus for 5 mts in microwave.
In a pan add oil. Once oil is hot add tempering ingredients. Once mustard seeds start spluttering add chopped onions and green chilies and cook till onion turn into golden color. (You can add red chili powder while onions are cooking if you want more spicy)
Now add nut paste and cooked asparagus. Add salt and little bit water to make it curry consistency.
Cook Asparagus in the sauce for 5 more mts and serve with roti or Naan or paratha.

ReplyDeleteSailaja, I was looking for a different recipe for asparagus, as I am used to making the dry kerala style Thoran at home. I tried this recipe 2 nights ago and served it with rotis. The whole family loved it, including my kids. Great recipe! Thanks for sharing.
