Egg curry

Even though I don't eat eggs I do cook eggs for my kid. I was planning to post this curry for long time finally took some time to take pics.


Here is the recipe for the same.

3 eggs
2 medium sized onions finely chopped
1 medium sized tomato finely chopped
1tsp poppy seeds
1/4 inch cinnamon stick
3 cloves
1tsp red chili powder(Adjust as per your spice level)
1tsp ginger garlic paste

Tampering ingredients:
1tsp mustard seeds
1/2tsp cumin seeds
curry leaves(4)


Boil eggs and remove shell and keep it aside.

in a pan add oil, once oil is hot add cinnamon,cloves, poppy seeds. Once they turn golden color add onions and ginger garlic paste and saute till onions turn into golden color. Now add tomatoes, chili powder and saute for few more mts till the raw flavor goes and turn off the heat. Once saute mixture cools down make a puree.
In the same pan add oil and tampering ingredients. Once mustard seeds starts spluttering add the puree, salt(adjust as per the taste) and cook for few mts.
Now add boiled eggs and cook for few mts and turn off the heat.

Garnish with coriander and serve with rice or roti.
