Coconut rice with Mixed Vegetable Kurma

It has been long time since I blogged. Finally blogging one of my favorite recipes of my mom. I still remember those days when my mom used to make these items for lunch/dinner. I used to eat so much.

Here is the recipe

Ingredients

Coconut Rice:

1/2 coconut cut into pieces and make a puree. Strain and remove the coconut pulp.
1 carrot chop into small cubes
1tbsp of cashews
1 bay leaf
1/2 inch cinnamon stick
6 cloves
4 green chilies slit length wise
2 cups of rice
salt

Veg Kurma:

tampering:
1tsp mustard seeds
1/2 tsp cumin seeds
curry leaves
2 red chilies

4 potatoes cut into cubes
1 bell pepper, 1 carrot cut into cubes
10 florets of cauliflower
2 medium sized onion
1 tomato
3 green chilies( Adjust as per spice level)
2tsp curd
1/4 inch ginger , 5 garlic cloves
salt
1tbsp oil

Below ingredients dry roast and make a paste and keep it aside.
1tbsp cashews
tbsp almonds
1/2tsp poppy seeds
1/2 inch cinnamon stick
4 cloves

Preparation:

Coconut rice:

In a pressure cooker add oil. Once oil is hot add cashews, bay leaf, cinnamon stick, cloves. Once cashews turn into golden color add ginger garlic paste and cook till raw flavor goes and add carrots and green chilies and stir fry for few more mts.
Now add rice and stir fry for 1 mt and add salt and coconut milk(1:2 ratio). If coconut milk is not sufficient add water. Adjust salt and pressure cook for 3 whistles.

Vegetable Kurma:

Make a paste of ginger,garlic and onion and keep it aside. Puree tomato. ( To save time you can combine ginger, garlic, onion and tomato paste)

In a pan add oil, once oil is hot add tampering(mustard, cumin ,curry leaves and red chili) . Add ginger garlic onion paste. Once raw smell of onion goes add tomato puree and curd and cook for few mts. Now add vegetables and cook for for 5 mts. Adjust spices and salt.

Add water cook till potato is 3/4th cooked. Now add cashew paste and cook till all the vegetables are done.

Remove from heat and garnish with Coriander and serve with coconut rice. You can serve this curry with pulav, roti too.
