After so many attempts finally yesterday night I got the right consistency of Chinese Style fried rice.
Here is the recipe for the same
2 cups of rice ( I used long grain basmati soaked for 30 mts. You can use regular short grain rice as well)
1/2 cup cabbage -julienned
1/2 cup carrot julienned
1/4 cup bell peppers cut into strips (if possible try to use different colored ones)
1/2 cup chopped spring onions
1/4 cup french cut beans (Optional) I forgot to add. But you can always french beans
black pepper (as per your spice level) I like it little spicy so I added about 1- 1/2 tsp. You can add 1/2 tsp and adjust as per your spice level
soy sauce - 2 tsp
salt as per your taste
Oil - 4 tbsp
Wash rice and cook using 1:2 ratio in a rice cooker. Plan to cook rice early. Cold rice works better to make fried rice. Once rice is cooked let it cool and puff it using fork.
In a wok or pan add oil. Fried rice should be cooked on high heat. Once oil is hot add chopped spring onions and let it cook for 1 mt and add rest of the veggies one by one and let it cook for 2 to 3 mts (semi cook.) Don't over cook veggies. To semi cooked veggies add soy,ground black pepper and salt. To this add cooled rice and toss and adjust spices if necessary.
Remove from heat and garnish with chopped spring onions and serve hot with Manchurian.
