Spicy Lentils with Spinach (Masoor Dal with Palak)

Last Friday I was going through Mediterranean cook book from my books collection. One of the recipes in that book was similar to our Indian recipes. I just tried the recipe modified little bit by adding more spices.
I never thought my daughter will love to eat lentils as a snack, but this dish she loved it.
Here is the recipe of Spicy lentils with spinach.


Ingredients:


1 Cup of Masoor Dal(Black/red Lentils)
1 medium sized onion (Finely Chopped)
2 garlic cloves finely chopped
1/2 inch ginger finely chopped
1 Bay leaf
1tsp cumin powder
1tbsp red chilly powder
1tbsp oil
1small bunch of spinach leaves (washed and chopped)
10-12 mint leaves chopped
3tbsp of cilantro leaves chopped
Salt to taste




Preparation:


1.Heat the oil in a pan over medium heat. Add the chopped onion,garlic, ginger and bay leaf. Continue cooking until the onion just starts to brown color.


2. Stir in the lentils to the pan. Pour enough water to cook the lentils. On low heat cook for 15 mts. (Approximately 2 cups of water is required for cooking this kind of lentils. If you want the lentils to be separated grain by grain add little less water.)
3. Meanwhile wash the spinach,cilantro, mint leaves and chop them.

4. Once the lentils are cooked add the chopped spinach and stir. Keep it for 5 mts. (You don't want to cook the spinach more time.) Add the mint,cilantro and stir it. Turn off the heat.

Once it is cool down for 5 mts add the lemon juice.
Garnish with cilantro leaves.



This is very delicious and nutritious. It can be served with roti or you can just eat it as it is like a snack.
