Ice Cream Cake for my Princess B'day



Finally the much awaited date has arrived. When I asked my daughter what type of cake she wanted it on her birthday, she wished for an Ice Cream Cake! I knew that it is her all time favorite. I usually buy the ice cream cake, but this year, I decided to grant her the wish. I decided to try my hand at baking/making the ice cream cake at home. I was surprised at the simplicity of the recipe. So I made this 3 layer Ice cream cake with 2 types of Ice cream and fresh fruits of her choice.
I learned this cake through Activity TV. Amazingly this ice cream cake doesn't need any baking.


Ingredients:

1 packet of cookie crush/wafers
1/2 gallon ice cream
2 cups of fresh fruits of your choice
fresh fruits of your choice or extra cookies for garnish
parchment/wax paper
spring form pan/cheese cake pan

Step by Step Instructions:

1. Spread 1/3 of your ice cream into a spring form pan. You can always use normal pan if you don’t have a spring form pan at home, but you’ll need to run the sides of the finished cake pan under hot water for the cake to release easily. Spring form/cheese cake pan will be handy if you are making cheese cake or ice cream cake.

2. After the 1st layer of ice cream sprinkle 1/3 of the crushed cookies on top all around the surface.

3. Now add the sliced fruits of your choice on top of the crushed cookie layer.



4. Now add 1/3 of ice cream for the 3rd layer. (If you are making 2 layer cake then add the remaining ice cream.)

5.Now add the 1/3 of the crushed cookies on top.

6. Take the remaining ice cream and spread it evenly over the cookie crush.


7.Sprinkle remaining cookie crush all over the surface.



8. After the cake is assembled, cover the surface with a large piece of waxed paper and press down evenly around the top of the cake so the layers come together.
9.Put it in the freezer for at least 4 hours or overnight.
10.When you are ready to serve your cake, remove it from the freezer and take off the waxed paper covering.
11.Place a serving platter on top of the cake pan and quickly and carefully flip your cake over.Release the spring form pan. Run your spatula around the edges.
12.Use your spatula to help slide off the piece on the top of the cake.
13.Garnish the top of the cake with some cookies.
14. Add some fresh fruit, and add some candles.
15. Put it back in the freezer until it’s ready to serve!

The delicious ice cream is ready to be served. My daughter and her friends had a blast with this cake.

Note: You need to work quickly otherwise ice cream will start melting. Also your hands will start to feel numb while working on this cake.

    Just get any cookies and cursh them after removing the cream. That is what I did. The same cookies without crushing I kept it for decorating.
