Kothimiri Rice( Coriander/Cilantro Rice)

Hi Everyone,
Ready to try to new item. Weekend parties, potlucks. Are you guys thinking what to make it different and easy? Here you go Coriander Rice. Very simple and different.
This is my mom's recipe. My mom used to cook this rice in just 40 mts for 10-15 ppl.
So try it and Enjoy..............................:) !



Ingredients:

2 cups of rice (rice can be basmati or regular)
4 cups of water
1 cup of carrot,peas.( If you wish you can add any vegetables)
1 Cilantro/Coriander bunch
1 onion (cut into big pieces)
2-3 Garlic cloves
1 small piece ginger
1 tomato
4 cloves
10-12 Cashews.
3 tbsp oil




Preparation:

First grind onion, garlic,ginger and coriander and make a paste and keep it aside. Grind the tomato and make a smooth paste/sauce of it.



Heat a heavy bottomed vessel add oil. Once the oil is hot add the cloves and cashews. Once the cloves and cashews turn golden color add the coriander sauce/paste, let it cook for 5 mts and add the tomato sauce let it cook for 5 mts till the raw smell goes. Now add the Vegetables once vegetables cook in the sauce for 5-6 mts add the washed rice and mix it well. Add Salt and water
cover with lid and cook on medium heat. This might take 10-15 mts. Once the rice is about to cook completely turn the heat to low heat. Keep it for 5 mts on low heat.

Once the rice is cooked turn off the heat and serve it with raita/kurma.




If you wish to cook sooner instead of the vessel you can use rice cooker keep it for 3 whistles.
